I’m including this “Mango Chicken Salad” recipe mostly because of the fruit included in the salad and the dressing. The salad includes mixed greens, necatarines or peaches, strawberries or blueberries, mangoes, and pecans. The dressing has cubed mangoes, orange juice, and vinegar. It sounds like a tasty Summer salad.
Houston Press has a good recipe, with step by step instructions, on how to make crepes. They even included a Vine. Crepes have been on my list of things to learn to make for a while, so I was glad to come across one that actually looks like I can follow it.
I recently “re-discovered” cucumbers and they’ve become part of my weekly grocery buy. Mostly I’ve been making cucumber water and eating cucumber chunks in lemon juice with Spicy Mrs. Dash seasoning. But I’m going to try this Cucumber Salad recipe from Moms Confession. It includes red onion, tomato, avocado, olive oil, vinegar and Italian dressing. Oh year, and cucumbers. Sounds tasty and good for the Summer.
I follow Martha Stewart’s Youtube channel. Usually she covers topics and recipes that are too involved for me to even consider. This one on how to make fluffy, non-stick scrambled eggs is one to bookmark.
I’ve made curried chicken salad, but hadn’t considered using the same for egg salad until I saw this “Curried Egg Salad” recipe. Includes raisins, cilantro, cucumbers and curry. Intended to be served on pita bread.
If you’ve never had Sangria, it’s something you absolutely have to try. Frui, juice and wine all together. Traditionally, it’s a red wine drink, but newer recipes include different kinds of wine. This one, “Summer sangria with pineapple + mango,” uses white wine and fresh mint, as well as mangoes, pineapple, cantaloupes, and apricots.
Seafood Pasta Salad
It’s a southern dish, Seafood Pasta Salad, and I learned to love it when I lived in Atlanta. I douct I’m ever going to go to the trouble of making the dressing from scratch, but the salad itself includes pasta, shrimp, crawfish, imitation crab, green onions, bell peppers, celery, and jalapenos.
This “Red, White & Blue Shortcake in Mason Jars” recipe is too cute not to share. I’m sure you can make it without the Mason Jars, but I like the casual, messy layers and the fact that you can really use any kind of fruit (not just the strawberries and blueberries) to a similar effect.

I love tarts but have never tried to make them myself because the recipes for them usually look too complicated. This “Raspberry & Honey Goat Cheese Tarlets” recipe looks amazingly simple, even the crust. The filling includes yogurt, eggs, goat cheese and honey. Topped with raspberries.
Another goat cheese tart recipe, “Asparagus & Goat Cheese Tart (with Flaky Cream Cheese Pastry).” The dough recipe isn’t as easy as the one above, but it uses cream cheese to make the pastry flaky. My grandmother uses cream cheese for her empanada dough, so I know that it’s a good ingredient for patries.
This Spanish Potato Omelette isn’t technically a tart, but it looks enough like a crust-less tart that I’m including it as one. It has a short ingredient list, with potatoes, eggs, ginger and olive oil. I might add goat cheese to it when I make it.
Chipotle has added tofu to their menu. Somehow, that strikes me as odd.

I love Tuna Salad and am always looking for ways to make it better. I came across this one, “Lighter Tuna Salad with Radishes and Dried Cherries.” It uses both low-fat mayo and Greek-style plain yogurt, as well as fresh dill, radishes, sunflower sees and dried cherries. I am looking forward to trying out this recipe.
This “Santa Fe Tuna Salad” recipe includes cucumbers, black beans, red bell peppers, corn, cilantro, lime juice and olive oil (among other things). A different kind of tuna salad, but one I want to try.
